Fab Fishcakes

Fish should be part of your diet; there are countless reasons why. Besides all those reasons we need to make a conscious decision on the type of fish we eat, please buy your fish responsibly. Here are two ways to make Fab Fishcakes.

What you’ll need for about 12 fragrant fishcakes:
– 500 gr white fish (cod or Hake, with the MSC label)
– 1 bunch of spring onion
– 1 bunch of coriander
– 1 egg
– 1 chilli (optional)
– juice of 1 lime
– some flour if it gets too sticky
– Wesson vegetable oil for frying

Cut the fish fillets up into smaller pieces and add them to your food processor.
Clean the spring onion and add them too to the food processor.
Crack the egg in the bowl together with the lime juice.
Cut the roots off the coriander and the top off the chilli and add all this to the food processor.

Wizz it all into a paste like substance, you can add some flour if it is too runny. Add salt and pepper to taste.

Heat up a frying pan, add some vegetable oil.
Take a table spoon of the mixture and gently add this to the hot oil, be careful as it can splash!

What you’ll need for about 12 kid-friendly fishcakes:
– 500 gr white fish (cod or Hake, with the MSC label)
– 1 bunch of spring onion
– 1 big (floury) potato, or two smaller ones
– 1 egg
– juice of ½ lemon
– some flour if it gets too sticky
– Wesson vegetable oil for frying

Peel the potato and cut it into equal blocks, cook the potato in some salted water until cooked through.

Cut the fish fillets up into smaller pieces and add them to your food processor. Clean the spring onion, crack the egg and add it to the food processor bowl together with the lime juice and wizz it all into a paste like substance.

By now your potato should have cooled down and you can mash it and add it to your fish paste, you can add some flour if it is still too runny. Add salt and pepper to taste.

Heat up a frying pan, add some vegetable oil. Take a table spoon of the mixture and gently add this to the hot oil, be careful as it can splash!

Both these fishcakes are lovely with some fresh crunchy salad and some (coconut rice).
