Granola Bars – Cranberry and Walnut Crunch

I used this crunch recipe for Food Revolution Day 2013. It’s so easy to make and just so wholesome. Granola barThis recipe makes about 10 – 12 bars.
What you’ll need:
– Mixing bowl
– Roasting tin of about 20 x 20cm
– small pan to melt the butter

– 100 grams unsalted butter
– 200 grams rolled oats (Quaker is a nice brand)
– 100 grams sunflower seeds, or 150 if you don’t like sesame seeds
– Handful sesame seeds
– Handful chopped walnuts
– 2 Handful dried unsweetened cranberries
– 3 tablespoons honey (flower honey preferably, so nice and fragrant)
– 100 grams cane sugar/ brown sugar (unrefined)
– 1 teaspoon ground cinnamon

Preheat the oven to 160degrees Celsius.
Butter the roasting tin, mix the dry ingredients (oats and seeds and nuts), add to the roasting tin and put in the oven for about 8 minutes to toast.
Melt the honey, sugar and butter in a small pan and add to the toasted mix, add the cinnamon and dried cranberries, mix well until all the ingredients are coated.
Put the mixture in the roasting tin and press down lightly, bake for about 30 minutes. Allow to cool in the tin, cut into bars.
