Jamie’s Classic Tomato Spaghetti

Pasta is a favourite with kids. This easy peasy tomato spaghetti recipe by Jamie is a really nice one we also cooked during Food Revolution Day 2016.

 What you’ll need (serves 4)
1 bunch of fresh basil, leaves picked
1 medium onion, peeled and finely sliced
2 cloves of garlic, peeled and finely sliced
1 kg ripe tomatoes, diced
olive oil
1 tablespoon balsamic vinegar
1 pack dried spaghetti
freshly grated Parmesan cheese

Heat a saucepan on medium heat, add some olive oil, and cook the onion until soft and slightly golden for about 5 minutes.
Add the garlic, most of the basil and tomatoes and a dash of vinegar. Give it all a stir and let it simmer for about 15 minutes.
Season with salt and pepper.

Bring about 2 liters of water to a boil, add some salt and cook the pasta for about 8 minutes or until al-dente.

When the spaghetti is cooked, add it to the tomato sauce and give it a good stir. Season with salt and pepper, the remaining basil leaves and freshly grated Parmesan.
